Blender Cassava Cake
Ingredients:
- 1 kg of raw cassava
- 2 and 1/2 cups (tea) of sugar
- 1 small bottle of coconut milk (200ml)
- 3 tablespoons of margarine or butter
- 1 packet of grated coconut (100g)
- 4 whole eggs
- 1 cup (tea) of milk
- 1 teaspoon baking powder for cakes
- 1 pinch of salt
Preparation method:
- Chop the cassava into very small pieces and pour into the blender.
- Then add the eggs, milk and coconut milk.
- Blend everything until the cassava is well crushed.
- Add the margarine and sugar.
- Beat for another minute and pour this mixture into a bowl.
- Add salt, grated coconut and baking powder.
- Mix well until smooth.
- Pour this mixture into a greased and floured pan.
- Bake in a preheated oven at 200ºC for about 30 to 40 minutes or until golden brown.
Moist condensed milk cake
Ingredients
- 1/2 can of condensed milk
- 3 eggs
- 1/3 cup (tea) of oil
- 1/2 cup (tea) of milk
- 1 and 1/2 cups (tea) of sugar
- 1/2 cup (tea) of cornstarch
- 1 and 1/2 cups (tea) of wheat flour
- 1 tablespoon baking powder
- Oil and wheat flour for greasing
- Chocolate sprinkles for sprinkling
Syrup
- 1/2 can of condensed milk
- 3 tablespoons of milk
Coverage
- 1 can of condensed milk
- 3 tablespoons of cocoa powder
- 1 tablespoon of butter
Preparation method
- Blend the condensed milk, eggs, oil, milk, sugar, cornstarch and flour in a blender until smooth.
- Add the yeast and mix with a spoon.
- Pour into a greased and floured 22cm diameter pan and bake in a preheated oven at medium heat for 35 minutes or until a toothpick inserted comes out clean.
- Let it cool and unmold.
- For the topping, in a pan, mix the condensed milk, chocolate and butter.
- Bring to a low boil, stirring constantly, and turn off the heat after 2 minutes. Let it cool. For the syrup, dissolve the condensed milk in the milk.
- Prick the cake with a fork and drizzle with the syrup. Top with the soft brigadeiro and sprinkle with sprinkles. Serve in slices.
