Lemon Soufflé

Ingredients

  • 1/4 cup lemon juice
  • 1/2 cup powdered sugar
  • 4 egg whites at room temperature
  • 1 pinch of salt
  • 2 teaspoons grated lemon peel
  • Butter for greasing
  • Powdered sugar for sprinkling

Preparation Method

  1. Heat the oven to high temperature.
  2. Grease the soufflé dish with butter and sprinkle generously with powdered sugar. Set aside.
  3. In a small bowl, whisk together the lemon juice and half of the confectioners' sugar. Set aside.
  4. In a mixer, beat the egg whites until stiff.
  5. Add the remaining sugar and salt and continue beating until stiff peaks form.
  6. Add the reserved lemon juice and grated rind.
  7. Mix gently with a spatula.
  8. Place the dough in the pan and bake until risen and lightly golden.
  9. Remove and serve immediately.

Strawberry Soufflé

Ingredients

  • 300g strawberries
  • 1 cup of sugar
  • 1 teaspoon lemon juice
  • 4 eggs, whites and yolks separated
  • 8 tablespoons of milk
  • 8 tablespoons of powdered sugar
  • 1 pinch of salt

Preparation Method

  1. Mix the first 3 ingredients and cook for 20 minutes.
  2. Remove from heat and let cool.
  3. Beat the egg yolks well with the milk and powdered sugar.
  4. Beat the egg whites with salt until stiff.
  5. Gently mix the egg yolks and add the strawberry jam.
  6. Place in greased pans and bake in a preheated oven at 220°C for 20 minutes or until lightly golden.

Guava Soufflé

Ingredients

  • 4 egg whites
  • 1 pinch of salt
  • 250g of creamy guava paste
  • Butter and sugar for greasing
  • Guava paste in small cubes for decoration

Syrup

  • 1 cup (tea) of culinary cream cheese
  • 1/2 cup (tea) of milk

Preparation method

  1. In a mixer, beat the egg whites with the salt until stiff.
  2. Gently mix the egg whites with the guava paste.
  3. Distribute into ramekins or small baking dishes greased with butter and sprinkled with sugar, filling only 3/4 of the way full.
  4. Place in a pan and bake in a preheated oven at medium heat (180º C) for 10 minutes or until golden and risen.
  5. Mix the cream cheese and milk for the topping at room temperature.
  6. Drizzle over the soufflés, garnish with cubed guava paste, and serve.
