Lemon Soufflé
Ingredients
- 1/4 cup lemon juice
- 1/2 cup powdered sugar
- 4 egg whites at room temperature
- 1 pinch of salt
- 2 teaspoons grated lemon peel
- Butter for greasing
- Powdered sugar for sprinkling
Preparation Method
- Heat the oven to high temperature.
- Grease the soufflé dish with butter and sprinkle generously with powdered sugar. Set aside.
- In a small bowl, whisk together the lemon juice and half of the confectioners' sugar. Set aside.
- In a mixer, beat the egg whites until stiff.
- Add the remaining sugar and salt and continue beating until stiff peaks form.
- Add the reserved lemon juice and grated rind.
- Mix gently with a spatula.
- Place the dough in the pan and bake until risen and lightly golden.
- Remove and serve immediately.
Strawberry Soufflé

Ingredients
- 300g strawberries
- 1 cup of sugar
- 1 teaspoon lemon juice
- 4 eggs, whites and yolks separated
- 8 tablespoons of milk
- 8 tablespoons of powdered sugar
- 1 pinch of salt
Preparation Method
- Mix the first 3 ingredients and cook for 20 minutes.
- Remove from heat and let cool.
- Beat the egg yolks well with the milk and powdered sugar.
- Beat the egg whites with salt until stiff.
- Gently mix the egg yolks and add the strawberry jam.
- Place in greased pans and bake in a preheated oven at 220°C for 20 minutes or until lightly golden.
Guava Soufflé
Ingredients
- 4 egg whites
- 1 pinch of salt
- 250g of creamy guava paste
- Butter and sugar for greasing
- Guava paste in small cubes for decoration
Syrup
- 1 cup (tea) of culinary cream cheese
- 1/2 cup (tea) of milk
Preparation method
- In a mixer, beat the egg whites with the salt until stiff.
- Gently mix the egg whites with the guava paste.
- Distribute into ramekins or small baking dishes greased with butter and sprinkled with sugar, filling only 3/4 of the way full.
- Place in a pan and bake in a preheated oven at medium heat (180º C) for 10 minutes or until golden and risen.
- Mix the cream cheese and milk for the topping at room temperature.
- Drizzle over the soufflés, garnish with cubed guava paste, and serve.
