Rainbow Cake Ingredients

  • Mass (multiply by 6, one of each color)
  • 1 cup (tea) of sugar
  • 3/4 cup (tea) of oil
  • 1 cup (tea) of milk
  • 2 cups (tea) of wheat flour
  • 1/2 tablespoon of yeast
  • 3 eggs
  • dyes of 6 different colors

Filling and topping:

  • 400g unsalted butter at room temperature
  • 4 cups (tea) of confectioner's sugar
  • 1/4 cup (tea) of milk
  • 2 tablespoons vanilla extract

Preparation method

*Before starting your recipe, remember that you must have enough ingredients to make this dough 6 times, once for each color!

Mass:

  1. In a bowl, beat the eggs with a whisk or mixer.
  2. Add the sugar and continue beating until a light, smooth cream forms.
  3. Add the milk, oil, and sifted wheat flour and beat on medium speed until all the ingredients have been incorporated into the dough.
  4. Add the yeast last and mix gently.
  5. Add the first color dye and mix well.
  6. Place the dough in a greased and floured round pan. Use springform pans as they are easier to remove.
  7. Bake in the oven at 180º C for 60 minutes or until a toothpick comes out clean.
  8. Wait for it to cool slightly before unmolding.
  9. Cut the top of the cake very carefully to keep it level and straight.
  10. Repeat this process for the remaining colors. The cakes should be baked in pans of the same size.

Tip: the colors of the rainbow are: red (or pink), orange, yellow, green, blue and violet.

Filling and topping:

  1. In a mixer, beat the butter with the confectioner's sugar until you get a smooth, homogeneous and fluffy cream.
  2. Gradually add the milk, beating constantly, until smooth.
  3. Finally, add the vanilla extract.

Assembly:

  1. On a serving plate, spread some filling and place the first cake layer. Start with the violet layer.
  2. Spread a generous portion of filling over the dough, being careful to make sure it is even, and place another layer of cake on top.
  3. Alternate cake and filling until finished. Follow the order: purple, blue, green, yellow, orange, and pink.
  4. Another way to assemble the cake is to use a pan with acetate around it.
  5. The finishing touch is up to you: you can make a rainbow naked cake using the frosting only on the top of the cake or cover the entire cake with the frosting.
  6. You can also use colored sprinkles!
