Lemon and orange cake with white chocolate
Ingredients
- 2 eggs
- 1 and ½ cups (tea) of sugar
- 2 and ¼ cups (tea) of wheat flour (about 250 g)
- 1 tablespoon baking powder
- 2/3 cup (tea) of strained orange juice
- 2/5 cup (tea) of oil
Filling and topping
- 1 ½ tablespoons of cornstarch
- 2/5 cup (tea) of orange juice
- ¼ cup (tea) of lemon juice
- 2 sifted egg yolks
- ½ cup (tea) of sugar
- 1 tablespoon of butter
- 200g chopped white chocolate
- Lemon zest
- 1 and ¼ cups (tea) of chilled fresh cream whipped into whipped cream
- 150g white chocolate shavings for decorating
- Candied orange for decoration
Preparation method
- Beat the eggs with the sugar until fluffy. Stir in the flour sifted with baking powder and the orange juice and oil, alternating with a whisk.
- Pour into a greased and floured round cake pan (23 cm in diameter) and bake in a preheated oven at 200°C for 30 to 35 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Unmold while warm and let cool.
- Divide the cake into 3 layers and assemble in a ring or springform pan.
- Make 2 layers of filling (reserve part of it in the fridge for the topping) and cover with the last layer of cake.
- Refrigerate for 1 hour to firm up.
- Unmold and cover with the reserved cream.
- Decorate with chocolate shavings and candied orange and refrigerate for about 2 hours before serving.
Filling and topping
- Dissolve the starch in the orange juice, add the lemon, egg yolks and sugar and cook over low heat, stirring constantly, until thickened.
- Add the butter and cook for another 1 minute, without boiling.
- Wait for it to cool a little and add the chocolate, stirring until smooth.
- Once cool, add lemon zest to taste.
- Refrigerate until very cold and gently fold in the whipped cream.
